Bacon Wrapped Lamb

Bacon Wrapped Lamb Topped with Brie

Ingredients

  • 4 Slices of Bacon
  • 1 Red Pepper Sliced
  • ¼ Onion Sliced
  • Brie Cheese
  • 4 – Lamb Tenderloin slice ¾ inch thick
  • 1 TBSP of Olive Oil

Directions

Wrap the Lamb with the slices of bacon.  (If the bacon is not staying wrapped around the lamb, use a toothpick to hold in place.)  Place the Olive Oil in a pan and place on Med-High heat.  Place the Bacon-Wrapped Lamb into heated pan.  Cooking the bacon side first until bacon becomes crisp.  Finish cooking lamb side for 2-3 minutes on each side.  You want the Lamb to be a medium-rare cook.  After turning the Lamb for the final side, place a good amount of brie on top of the lamb and cover.  Remove lamb when the brie is almost melted.

In a separate pan, sauté pepper and onion in olive oil until tender.

Place the Bacon-Wrapped Lamb on a plate and top it with the pepper and onion.
